Rockin' Lobster

What could spice up a cold February night in land-locked Colorado? How about Lobster Pizza!! On a recent trip to Bequia--a lovely little island in the Caribbean*, we visited a favorite restaurant that we found on a prior Windjammer sailing trip--Mac's Pizza. This small and humble shack produces the most amazing, mouthwatering lobster pizza (in season) We get ours simply done with garlic and olive oil. Tonight I attempted to duplicate or at least approximate Mac's Lobster Pizza. The result was pretty good! Now if I just had a rum punch and could snuggle my toes into the sand, it'd be perfect! My recipe: Udi's Gluten Free pre-made crust (you can substitute any crust, Mac's isn't gluten free) Garlic Onions Olive Oil Mozzarella cheese 1 small lobster tail Smear crust with good quality olive oil, spread pizza crust liberally with garlic (I used minced in a jar), sprinkle diced onions and bite size bits of lobster. Cover liberally with cheese and bake 7 minutes (your crust may be different) at 375 degrees. Let me know if you try this recipe and how it turns out! You may just be hooked.
